Mason Royal
Trained at the New School of Cooking in Culver City, CA, Chef Mason Royal, a Los Angeles native, progressed through prominent L.A. kitchens, beginning at Plan Check Kitchen + Bar under Chef Ernesto Uchimura. He currently serves as Director of Operations at Max & Helen’s Diner. He is the steady hand behind the scenes, leading the staff, overseeing execution, and helping to shape the business from the inside out.  Previously, Royal held key roles and contributed to openings at Broad Street Oyster Co, Hotel Erwin, Lowell Café (Cannabis Café) and Trejo’s Tacos.
