Zach Pollack

An LA native, Zach was pursuing a degree in architecture in Florence, Italy when he became smitten with Italian cooking. After graduating, he closed the book on his architectural aspirations and returned to Italy to learn everything he could about Italian cuisine.

He spent nearly two years there, taking on jobs and apprenticeships that ranged from Michelin-starred ristoranti to a mom-and-pop salumeria in Umbria and a lamb and pig farm in rural Sardegna.

Back in LA, Zach cut his teeth at some of the city’s best restaurants before partnering with Chef Steve Samson to open Sotto in 2011. The restaurant received widespread popular and critical acclaim, including a spot on Esquire’s “Best Restaurants in America” list and the #1 spot in Los Angeles magazine’s “Best New Restaurants” awards.

In 2014, he struck out on his own to open Alimento in Silver Lake, followed by Cosa Buona in Echo Park three years later.

Zach began working on Cosetta in 2022 and is thrilled to finally open its doors after three years in the making.
